Step by Step description

Urad and Rajma preparation:

  1. Take urad dal and kidney beans(rajma), add water and rinse properly remove all the rinse water.
  2. Repeat the second time the rinsing for better cleaning. Do not throw the rinsed water.
  3. Now add fresh water to sook urad dal and kidney beans(rajma), for 8 hr
  4. After 8 hours of soaking, drain the water
  5. Add urad dal and kidney beans(rajma), in a pressure cooker, add water, add salt ½ tsp, one pinch baking soda, boil it in high flame for one whistle and low flame for three to four whistles.
  6. Boiled urad dal and rajma is ready

Gravy preparation:

  1. Take a chopped tomato and grind it to make to paste
  2. Take Kadai, add pure ghee 2 tbsp, add cumin(jeera) seed after ghee gets hot, add finely chopped onion, saute it till onion colour changes to light brown
  3. Add chopped ginger, chopped garlic, saute it.
  4. Add tomato paste and salt as required, red chilli powder, saute it
  5. Add boiled urad dal and rajma and mix it well and cook for 5 to 7 min.
  6. Add coriander powder, cumin powder and garam masala, mix it well and cook for 2 min.
  7. Add coriander leaves, mix it well and cook for 2 min
  8. Dal makhani is ready
  9. Take another small pan, add butter 2 tsp, after butter gets melt, add ½ tsp red chilli powder, mix it well in low flame. This is called Tadka.
  10. Now add this Tadka into dal makhani,
  11. Transfer this into a bowl, add butter, garnish with coriander leaves, add 2 tsp fresh cream to improve your service experience. Similarly, dal makhani with milk also can be tried. There is no much difference between Amritsari dal makhani recipe and Punjabi dal makhani recipe, both are using the same ingredients with a small change in qty.

Dal makhani ingredients:

  • Urad (black) – 100 gm
  • Rajma (kidney beans) – 30gm
  • Onion – 1 pc (finely chopped)
  • Tomato paste with – 3 pc
  • Ginger small – 1-inch pc (graded)
  • Garlic – 4 cloves
  • Coriander (Dhaniya) powder – 2 tsp
  • Cumin (jeera) powder – 2 tsp
  • Cumin(jeera) seeds – 1 tsp
  • Garam Masala – 1 tsp
  • Butter – 2 tbsp
  • Fresh cream – 2 tsp
  • Baking soda – 1 pinch
  • Red chilli powder – 1 tbsp
  • Asafoetida (Hing powder) – 1 pinch
  • Pure Ghee – 2 tbsp

Cooking Tips:

Instead of adding rice rinsed water, one can use milk and this becomes a new recipe called dal makhani with milk.
